Shaved Beet and Carrot Salad

Ingredients

baby carrots, sliced thin

fennel, sliced thin

fennel fronds, chopped

cioggia beets, sliced thin (raw)

arugula

red wine vinegar

extra-virgin olive oil

Instructions

In a large bowl combine all of the vegetables and arugula. Drizzle with vinegar and oil, season with salt and pepper, toss and serve.
